Lemon Pappardelle With Garden Vegetables…

I don’t know why, but for whatever reason, I have been on a huge pasta kick this last week.  I love pasta, but honestly I rarely make it. This week, on the other hand, I have made it three times!! Fettuccine Alfredo, Chicken Carbonara, and tonight Lemon Pappardelle with the most delicious organic zucchini and yellow squash that I got for free…This morning, a gal who is just starting up her farm,(adventuresinorganic@live.com) brought  a box of fresh produce to the church I attend. I was so excited to be able to take home some fresh and delicious looking veggies. Tonight after my fam and I got back from a walk, run, and melt down at the park:) ( toddlers) I decided I was going to create a very simple yet satisfying pasta dish and that’s exactly what I did.

Start by sauteing one medium zucchini and one medium yellow squash in a couple tablespoons of butter on med- high heat. Salt and pepper. Now, once your veg is cooked, set aside. Also get your pasta water up to a roaring boil. Salt your pasta water and add 1 package of lemon pappardelle pasta. I found it at Trader Joe's. If you can't find that pasta use whatever is in your pantry!

Now while your pasta is cooking make your sauce. I added to the same pan I sauteed the veggies about 3 tablespoons of butter, 1 cup or so of heavy cream, 1 big handful of shredded parmesan cheese and about a 1/4 cup torn basil. Cook on med high heat until sauce is mixed together and is very creamy smooth...

Add your pasta straight to the sauce pan...if you used regular pasta and you like lemon now would be the time to add a little fresh lemon juice:) Not alot just a little.

Now add your veg back in....

 

Mix all together and just have your heat to low. Get your plates ready!!

Plate your pasta and add some fresh basil to the top...enjoy!!!

This dish is so simple and sastifying by itself or with a nice salad and bread. If you want, add some more veggies or even some chicken. Pasta is so much fun because you can do so much with it!! I always say that when you haven’t a clue what to make for dinner, and your in a hurry, just open up the fridge and pantry and create something wonderful with what you have.

    This looks amazing! can’t wait to try it…. I never would have paired this combination of ingredients together. I love quick and easy! Thanks for posting this dish!
